My son Jake is a huge fan of mac & cheese. I found a wonderful aged Vermont White Cheddar at Trader Joes and he begged me to make mac & cheese... coupled with some fresh picked broccolini... Mmmm Mmmm Mmmm !!
1 Pound of your Favorite Pasta... I used Ziti, Cooked According to Box Instructions
1 Stick Unsalted Butter
1 Small Onion, Minced
3-4 Garlic Cloves, Minced
1/2 Cup Unbleached Flour
4 Cups Milk, I used Fat Free
4 Cups Broccolini, Chopped
4 Cups Vermont White Cheddar, I used Trader Joes, Shredded
Salt and Pepper to Taste
Get all your ingredients ready while the pasta is cooking...
Gently melt the butter... do not let it brown...
Chop the onion, and garlic very very fine...
Add to the simmering butter ...
Cook on low to med for about 2 minutes...
Add the flour...
Cook the roux for about 1 minute...
Add the milk and whisk until thick and smooth...
Add the pepper... do not adjust the salt until after you add the cheese...
Have the cheese and whisk ready ...
Add the cheese a handful at a time... whisk in between...
Whisk into a smooth sauce...
Add the finely chopped broccolini...
Cook for about 1 minute on low heat...
Add the cooked pasta...
Mix and allow to sit for a couple of minutes before serving nice and hot...
