Fergie's Portuguese Sausage Pasta


I have recently started experimenting in the kitchen with different types of sausage... this weeks "Sausage DuJour" is Linguica which is a Portuguese.  Linguica is cured, then smoked and is filled with lots of garlic, oregano and lots of paprika... the paprika in the sausage will color your dishes beautifully.  Try this simple and quick pasta dish, I am sure you will throughly enjoy it! 

1 Shallot, Thinly Sliced
1 Bunch Swiss Chard 
2-4 Garlic Cloves, Sliced 
1 Large Link of Linguica
3 Tablespoons Olive Oil 
Salt & Pepper 
1 Pound Pasta, Cooked 
1 Cup Plain Greek Yogurt 
Parmesan Cheese 


Heat the Olive Oil and add the Shallot, Garlic, Swiss Chard, and Sausage
Cook for at least 5-6 minutes... 



This is what it should look like when you are done... 


Add the cooked pasta and 5 ladles of the pasta water... 


Add the yogurt... Simmer for a couple of minutes and serve hot... 


Sprinkle with Fresh Grated Parmesan Cheese...
