Fergie's Ricotta Waffles
Love making everyone homemade waffles on weekend mornings... they can get a bit boring though... check out what I did to this batter...Creamy, Crispy, Heaven on a plate!
3 Cups Flour
3 Teaspoons Baking Powder
3 Teaspoons Baking Soda
1 Teaspoon Kosher Salt
1-2 Teaspoons Cinnamon
1/4 Cup Raw Sugar
3 Eggs, Room Temperature
1 Cup Ricotta Cheese
1/2 Cup Unsweetened Applesauce
1 Tablespoon Vanilla
1/4 Cup Melted Unsalted Butter
1/4 Cup Vegetable Oil
1/4 Cup Maple Syrup
2 - 21/2 Cups Milk (I used Skim)
Combine all the wet ingredients and slowly add the milk until you rich a batter that is a bit
thicker than pancake batter... you may not need the whole 2 1/2 cups of milk.
Heat and spray the waffle iron...
Pour your batter and cook your waffle...

Fergie's Portuguese Sausage Pasta
I have recently started experimenting in the kitchen with different types of sausage... this weeks "Sausage DuJour" is Linguica which is a Portuguese. Linguica is cured, then smoked and is filled with lots of garlic, oregano and lots of paprika... the paprika in the sausage will color your dishes beautifully. Try this simple and quick pasta dish, I am sure you will throughly enjoy it!
1 Shallot, Thinly Sliced
1 Bunch Swiss Chard
2-4 Garlic Cloves, Sliced
1 Large Link of Linguica
3 Tablespoons Olive Oil
Salt & Pepper
1 Pound Pasta, Cooked
1 Cup Plain Greek Yogurt
Parmesan Cheese
Heat the Olive Oil and add the Shallot, Garlic, Swiss Chard, and Sausage
Cook for at least 5-6 minutes...
This is what it should look like when you are done...
Add the cooked pasta and 5 ladles of the pasta water...
Add the yogurt... Simmer for a couple of minutes and serve hot...
Sprinkle with Fresh Grated Parmesan Cheese...

Fergie's Cheating Sugar Donuts
I have been making these for years! I KNOW they will become loved regulars in your home too...
I do know how to make donuts from scratch but why when these are so perfect!!!
1-2 Cans of Buttermilk Biscuits
Vegetable Oil
Sugar
This is my favorite kind to buy because they don't have a bunch of extra
junk like the traditional ones have!
Put a bit of flour on a plate and lightly press down with your fingers... using a
small round cookie cutter cut out the center...
Fry until golden brown on both sides...
Pull out of the hot oil and immediately roll in sugar...
Does this get any better??? Really???
Fergie's Tomato & Chicken Rissotto
My children love the creamy texture of risotto... it has that stick to your ribs goodness that my children crave, especially after a cold, rainy day like today. This isn't your traditional risotto in the sense that you do not have to sit and stir for 10 hours!!!
1 Shallot, Thinly Sliced
1 White Onion, Chopped
4 Tablespoons Olive Oil
3 Cups Arborio Rice
2 Boneless, Skinless, Chicken Breast, Cut into Small Cubes
4-5 Cloves of Garlic, Chopped
6 Cups of Water
4 Heaping Tablespoons Tomato Chicken Bouillon
1 Tablespoon Spanish Paprika
1 Tablespoon Ancho (or any) Chile Powder
1 Teaspoon Oregano
1 Teaspoon Cumin
1 Small Can of Tomato Sauce (no salt)
1 Cup Shredded Carrots
Fresh Flat Leaf Parsley for Garnish
Chop your onions and shallots while the oil is heating in the pan...
Add the onions and shallots to the hot pan and cook for 2-3 minutes...
Measure the rice...
Add the rice to the onion mixture and cook for another 3-4 minutes...
Cut your chicken into cubes ...
Add the chicken to the rice and onion mixture...
Get your garlic ready...
Add to the pan...
Add the water and bring to a boil...
Add the carrots, and all the spices...
Add the tomato sauce...
Simmer on medium, covered and stir a couple times before the water is almost absorbed...
I think my son would have licked the plate if I let him!
Fergie's Fennel Beer Bread
To continue with my Saint Patrick's Day "Theme" my husband asked if I would make him some beer bread. So glad I did... super simple, and so tasty... I flavored it with Fennel Pollen (Which is not very easy to find) You can substitute with Fennel Seed.
3 Cups Bread Flour
1 Tablespoon Baking Powder
1 1/2 Teaspoons Kosher Salt
4 Tablespoons Sugar
1 Teaspoon Fennel Pollen or Fennel Seeds
3 Tablespoons Melted Butter
1 12-Oz can of Beer, Room Temperature
Combine all the dry ingredients and mix well...
This is the fennel pollen I used, I bought it at Old Town Temecula Spice Co...
Add the beer and the butter...
Mix until just incorporated...
I used a stone pan (it is not dirty, just seasoned)... generously spray with vegetable spray...
Place in your pan and bake in a 375 degree oven for about an hour...
Allow to cool before slicing... this bread is a bit sweet, moist and unlike anything you will have!!!
