FEEL BETTER SOUP

Feeling a little under the weather? Had a little too much to drink?? Feeling BLAH.... ??? This is an amazing soup to give you that pick me up you are looking for!!! Don't fear the onions.... there are 6 in this recipe...!!! I know it sounds crazy but Onions are jam packed with immune-supportive Vitamin C, Chromium to help balance sugar levels, a ton of Fiber for Heart and Intestinal health. They are also a wonderful source of Manganese and Molybdenum which boost enzymes in the body, Vitamin B6, Folate, and Potassium,  Energy-Enhancing Phosphorus, Copper for Bone Support.  Onions are also low in Calories... only 60 in a whole cup. Mushrooms!!! Mushrooms have such incredible healing properties and are known for being an amazing protector against Cancer!!! Great source of the three essential B Vitamins... Riboflavin, Niacin, and Pantothenic Acid. Try this soup... just once and you will see what I am talking about!!! The power of food is amazing!

FEEL BETTER SOUP

6 White or Yellow Onions, Sliced... Diced... or Minced in Food Processor
1 Whole Package of Baby Bella Mushrooms, or any you may have
1 Whole Bunch of Kale or Spinach (if using Spinach... add right before serving)
3-4 Stalks of Celery, diced
8 Cups of Veggie Stock or 8 Cups of water and  4 tablespoons Powdered Veggie Bouillon
2 Teaspoons Dry Parsley
1 Teaspoon Dry Oregano
1/2 Teaspoon Dry Thyme
2 Bay Leaves
1/4 Cup of Olive Oil
Pepper... Lots of Pepper









Heat Oil and add the Onions... make sure that you lower the heat to medium... you do not want to brown the onions... this will make your soup sweet!

Cook for 10 minutes... this is what they should look like!

Add Celery and spices.

Cook for about 2 minutes.

Add Kale and Mushrooms

Cook for about 2 minutes.

Add Veggie Stock or 8 cups of Water and 4 Tablespoons of Veggie Bouillon

Simmer for 10 minutes

This soup is amazing... and makes you feel GREAT!!!

CLEAN CUTTING BOARDS AND SINKS

Well I wanted to give you some groovey bacteria names and numbers... but seriously they are in the hundreds.... !!!!  Alot of times we think that good old soap and water will do the trick, but that is not true!!! The bacteria that is in our cutting boards can make us very ill, and even in some extreme cases cause death. It takes a couple of minutes to do maintenence on our boards ... If your board is really stained... I would suggest bleach at that point... and make sure you rinse throughly before it comes in contact with food... better yet ... chuck it and start fresh... better be safe than sorry.  The method used below works great for wooden boards are well.... remember to treat your wooden boards and spoons with a good quality oil... World Market and WilliamsSonoma have great ones. For Daily use maintance... I keep a small spray bottle of White Vinegar under the sink... spray after washing and let it dry.

Cutting Board after preparing dinner

Slice a lemon... add about 1/4 Cup of Baking Soda... a few drops of Soap

Squirt the lemon on the soap and baking soda... it will fizz...

Using the lemon as a scrubber.... give it some good elbow grease.

You will have some left on the lemon... don't waste it.... hit the kitchen sinks!!!!
Don't stop there... throw the lemon down the drain and run the water on high... turn disposal on and let her rip!!!



Rinse with super hot water!!!


BEAUTIFUL.... NOW THAT'S A CLEAN CUTTING BOARD!!!

Crusted Salmon

I had Salmon and was not sure what to do with it.  The kids are usually pretty adventurous (except Jacque) so I played around and came up with this delicious concoction... !!!

CRUSTED SALMON

1 Cup Mayo
1/4 Cup Dijon Mustard
1 1/2 Cups Baby Spinach
Garlic, a lot of it.... you know me!!!
1/2 Teaspoon Pepper
1/4 Teaspoon Oregano
1/4 Cup of Plain Bread Crumbs
6 Pieces of Salmon



I buy the Salmon frozen and individually wrapped. To defrost put in a bowl with tepid water.

In the food processor put all ingredients except the bread crumbs and the fish....

Pulse until smooth

Spray pan with Olive Oil Spray or PAM

Put fish skin side down and pat fish dry...

Spread about 2-3 Tablespoons of mixture on each piece of fish.


Should look like this.

Sprinkle with bread crumbs

Bake is a 425 preheated oven for 25 minutes until firm to the touch... or inner temp reads 145

You will have about 1/2 Cup of mixture left over.... what do do with it????? HHHHmmmm.....

Put back in Food Processor ... add 1 Tablespoon of Dijon Mustard and 1/3 Cup White Vinegar

Turn on and drizzle in 1/3 cup Olive Oil

Here is the lettuce I packaged last week on Wed.... still green and super crispy!!! My method works people!!!

Was not using it all so I re-wrapped in in new paper towels and put back in the fridge... will be good for another 3-5 days!!!


You cannot make a good salad without drying out the lettuce.... so take it for a spin!!!

Try this same recipe with Chicken Breast... I am sure it will be just as good, let me know.
